How to tell good sushi

Rice

Warm or at room temperature, with grains you can feel. Cold, sticky rice means the roll has waited on a shelf.

Fish

Clean colour, firm texture and no smell.

Assembly

The roll holds its shape without being pressed flat, and the filling runs the full length.

Made to order

A roll is at its best a few minutes after it is made. Ask whether the sushi is made to order.
